    COCONUT & PINEAPPLE DAIQUIRI

    This beautiful take on the classic daiquiri was created for us by the talented team at Shoreditch's TT Liquor, for the Cocktails in the City event. 

    Made using our signature Four Island blend, it pairs the natural tropical fruit flavour profile of the rum with coconut cream and pineapple juice, creating an instant summer classic! One sip and you'll be carried away to a tropical beach....

    What you'll need: 
    • 50ml Four Island Rum
    • 25ml Lime Juice
    • 15ml Sugar Syrup
    • 20ml Coconut Cream
    • 20ml Pineapple Juice
    • Pineapple leaf to garnish

    How to do it:

    • In a Boston glass or shaker, add the rum, lime juice and sugar syrup
    • Fill with cubed ice and seal
    • Shake vigorously for 15-20 seconds
    • In a high-ball glass, add the coconut cream and pineapple juice and fill halfway with crushed ice
    • Strain in the daiquiri and churn for 5-10 seconds 
    • Top with more crushed ice and garnish with a pineapple leaf 
    • Serve and enjoy
