Rum and honey are a match made in heaven, so you can never go wrong with an Airmail. Topped up with sparkling wine or Champagne, it's a decadent delight.

INGREDIENTS:

45ml Four Island Rum

20ml honey syrup (2:1)

20ml lime juice

Brut sparkling wine or Champagne 

HOW: 

Shake first three ingredients, then strain in a coupe glass. Top up with sparkling wine.

GARNISH:

Orange peel.
