45ml Navy Strength Rum
20ml Raspberry Coulis (possibly 3-4 raspberries, muddled)
20ml Lime Juice
15ml Simple Syrup
HOW: Shake all without ice / Shake again with ice / Double strain in coupe glass.
GARNISH: 3 raspberries on a cocktailpick.
45ml Four Island Rum
15ml Lanique Rose Liqueur
2 dashes Angostura Bitters
2 dashes Peychaud's Bitters
HOW: Stir with ice / Strain over single cube.
GARNISH: Expressed grapefruit peel and possibly some fresh berries.
45ml Silver Moon Rum
45ml White Vermouth (not Dry vermouth)
1 barspoon of Green Chartreuse
HOW: Stir with ice / Strain in Martini Glass
GARNISH: Express lemon peel and garnish glass with it.
50ml Arribada Rum
3 dashes Angostura Bitters
2 barspoons Demerara Sugar (to taste)
HOW: Stir with ice / Strain over single large rock / Express Orange Peel over result.
GARNISH: Orange Peel.
45ml Arribada Rum
30ml Dry Oloroso Sherry (possibly Amontillado as well)
10ml Amaro Di Angostura (alternatively, another Amaro and a dash of Angostura Bitters)
HOW: Stir with ice / Strain in coupe glass.
GARNISH: Maraschino Cherry.
20ml Honey Syrup (2:1)
Brut Sparkling Wine
HOW: Shake first three ingredients / Strain in a coupe / Top with sparkling wine.
GARNISH: Orange peel.
30ml Four Island Rum
90ml Hot Coffee
15ml Unsweetened Coconut Milk
15ml Simple Syrup (or alternative sweetener)
HOW: Build all-in heat resistant glass and stir well to combine.
GARNISH: Whip cream and cocoa powder.
50ml Navy Strength Rum
100ml Grapefruit Soda
HOW: Build in a tall glass over plenty of ice.
GARNISH: Slice of pink grapefruit and/or Mint Sprig.
60ml Four Island Rum
15ml Orange Liqueur
25ml Lime Juice
HOW: Shake all / Double strain over crushed ice.
GARNISH: Spent lime shell and mint sprig.
45ml Pineapple Juice
15ml Lime Juice
HOW: Shake all with ice / Double strain over either crushed ice or a large cube (whatever you prefer) in a glass according to your serving of choice.
GARNISH: Mint Sprig.
30ml Pineapple Juice
30ml Lime Juice
HOW: Add all ingredients to your glass / Fill halfway with crushed ice / Churn or swizzle until well mixed / Add more ice until full.
GARNISH: Mint Leaves, Lime Wedge and/or Dehydrated Pineapple.
50ml Silver Moon Rum
20ml Simple Syrup
HOW: Shake with ice / Double strain in a coupe glass.
GARNISH: Lime wedge.
15ml Pomegranate Syrup/Grenadine
1 small barspoon Absinthe
HOW: Shake all with crushed ice / Open pour in large glass (pilsner/highball/tiki).
GARNISH: Mint Sprig and Lime Wedge.
40ml Arribada Rum
30ml Sweet Vermouth
HOW: Stir with ice / Strain over fresh ice.
GARNISH: Express orange peel and garnish glass with it.
60ml Navy Strength Rum
22.5ml Simple Syrup (or Demerara Syrup)
5 dashes Angostura Bitters
Freshly grated nutmeg
HOW: Shake all, including nutmeg, with crushed ice / Open pour in your glass.
