One of the classic rum cocktails, the Daiquiri is thought to have originated around 1900 at a bar in Santiago, Cuba.  According to the legend, an American mining engineer named Jennings Cox created the drink because he had run out of gin!  There’s little chance of that happening today, but that’s one reason the Daiquiri is a great introduction to rum for bored gin lovers.  The key is balance – the best Daiquiris use eight parts rum, one part lime and just under one part sugar to create a lovely softly glowing, subtly sour drink.

60ml Lost Years Silver Moon or Navy Strength

15ml fresh lime juice

10ml sugar syrup

1 slice of lime

Combine the rum, lime juice and syrup in a cocktail shaker

Shake vigorously for at least 30 seconds

Strain into a frozen coupe glass

Add a slice of lime to garnish
